Our story begins with family and a suitcase full of recipes.
In 1928, our grandfather came to America from Italy, heading west to the Las Vegas valley. He brought two things with him: hopes for a bigger life, and the old-world salame recipes passed down through generations. Those recipes became our compass, guiding how we hand-trim, season in-house, and give flavor the time it deserves.
Vegas did the rest.
The city that never blends in taught us hospitality, confidence, and how to show up with a little shine. Old-world craft met new-world energy, and Viva Carne was born. Heritage in the recipe. Headliner energy on the board.
