Saucisson Salami — With Garlic & French Champagne

This salame is crafted with aromatic garlic and finished with genuine Champagne from Reims, giving it a refined brightness that cuts through its rich, savory depth. Pepperone Salami — With Red Chiles & Paprika
Spicy, smoky, and unapologetically bold, our Pepperone salame blends crushed red chiles with sweet smoked paprika for a balanced heat that lingers. Aged to develop a rich, rounded flavor, this Italian-style favorite delivers power without harshness — perfect for those who crave intensity in every bite. Finocchiona Salami — With Chardonnay & Fennel

Viva Carne sells artisanal salami. What does that mean?
Artisanal salami refers to meats that are hand-made and produced in small-batches using traditional curing methods. This allows for natural texture, richer flavor, and a higher quality product from start to finish.
In contrast, mass-produced meats are made in high-volume facilities using automated machinery, chemical additives, and accelerated curing processes. Those methods prioritize speed and uniformity, often at the expense of depth of flavor and craftsmanship.
By working in small batches and focusing on traditional methods, Viva Carne salami delivers a rich, nuanced taste that defines true artisanal charcuterie.

Our Salami is made right here in Las Vegas! We produce everything out of the Fermentato. Las Vegas's only USDA-grade salami-making facility. Learn more about the Fermentato here.

Are your meats gluten free?
How long does the salami last?
Unopened it can last for up to a year in your pantry.
Once opened it should wrapped tightly in the fridge and be consumed within 14 days.
How does it taste?
How should I store the salami once it arrives?
Our Salami is expertly cured and shelf stable. No refrigeration is needed thanks to the traditional methods of curing our team uses. Our product can deliver bold, rich flavor right from the pantry. Unopened our salami can keep for up to a year in your pantry. Once opened it should be stored in the fridge.
Does salami need to be refrigerated?
Salami only needs to be refrigerated once it is opened. There can be a bit of natural oil on the product. That is totally normal and the mark of quality. If this happens, just chill it to firm it up and the flavor will stay delicious.

What does Saucisson Sec with Garlic & French Champagne pair well with?
Cheese:
This saucisson shines with classic French cheeses like Comté, Brie, and Camembert, where their creamy or nutty textures balance the garlic’s savoriness. How much does shipping cost, are there free-shipping thresholds, and when will my order ship?
When will my order ship?
We try to ship orders out as soon as we can! To help ensure that your product arrives timely and doesn't spend too much time in the mail, we typically ship everything out on Monday - Thursday.
How is shipping handled during warmer months?
During the warmer months or when shipping to warmer climates our packaging includes ice packs and cold insulated mailers.
Do you ship nationwide?
Yes, we ship nationwide.
Do you ship internationally?
Right now we do not ship internationally.
Do you offer local pickup or tasting events?
Yes! Local pickup and tasting events are available through Fermentato, Las Vegas’ one and only USDA-grade salami-making facility. You can also join upcoming charcuterie and meat classes hosted there.
