Finocchiona is Italian for fennel, "finocchio." Our Finocchiona is hand crafted with fennel seed, ground fennel and fennel pollen to create a vibrant floral reminder of its Tuscan lineage. We use heritage breed hogs for our small batch production to ensure the highest quality of salumi for our customers.
